The 19th century Blue Mountains home of Sir Frederick Darley, chief justice of New South Wales, has been faithfully restored and now houses the award-winning Darley's restaurant in Katoomba. Set in two acres of English-style gardens and with views of the Jamison Valley, the adjoining 85-room country house has been designed and furnished to complement the original residence.
